Story of the Cacao: This is the story of the cacao bean...and the best dark chocolate you will ever taste! Barbara Mietling in Metamora, Michigan, on a quest for providing healthy foods for her family, has unlocked the secrets of the cacao bean. This unique bean comes from a cacao fruit tree, also known as Theobroma Cacao, native to Ecuador. These lovely fruit trees produce pods which are then cracked open to release the cacao beans. Removing the contents of the pod, the beans are left in the sun to dry and ferment for several days. Once dry, the cacao beans are chopped up into tiny, edible pieces called nibs. The nibs are then cold-pressed to a paste and repeatedly pressed until it becomes a powder. As the cacao nibs are being compressed, it also releases a rich butter that resembles white chocolate in taste and appearance.
